Marysabel Caballero and Moises Herrera’s honey-processed Pacamara is intense, sweet, and deeply fruit-driven. In the cup: winey acidity, ripe red berries, and tropical fruits.

THE PRODUCER

Marysabel Caballero and Moises Herrera are widely regarded as some of Honduras’ finest coffee producers. At Finca El Puente, their work focuses not only on quality, but also on improving social and environmental conditions around their farms.

Their Pacamara lots are known for exceptional sweetness and distinct varietal character. This honey-processed lot shows even greater intensity than the washed Pacamara Tim Wendelboe bought from them last year, with clear red fruit, tropical fruit, and winey acidity.

THE PROCESS

The Honey process at Finca El Puente involves:

🍒 Hand-picking — Ripe cherries selected by local pickers
🎒 Sorting — Pickers separate ripe and unripe cherries into different bags
🔧 De-pulping — Cherries de-pulped in the afternoon
⚙️ Partial mucilage removal — Some mucilage removed mechanically
☀️ Raised-bed drying — Dried slowly on shaded raised beds
🌙 Overnight covering — Covered at night to prevent condensation
📦 Protected storage — Stored in airtight GrainPro bags before milling and vacuum-packing

The small amount of mucilage left on the parchment encourages a subtle wild fermentation during early drying, adding extra fruit depth and intensity to the cup.
