As age grows into the golden years, the Sunset is the next stage. For these coffees, they've had their rest, they're still fit and fine, but they know there's only a month or so left of the peak period before we have to say goodbye.
Basically... these coffees are about 10+ weeks off roast and are perfectly good, but for some people that's a tad too long to put the coffee into rotation. These coffees are for those who want to use and brew immediately to take advantage of the sunset.
Some are exceptionally rested (these will be listed under 'Super Rest' on the listing, and are 12+ weeks off roast).
Anything approaching 6 months off roast (20 weeks), will be classified as seasoning coffee.
