A genuinely exciting decaf from Finca Los Nogales in the highlands of Huila — hand-picked, carefully fermented, and decaffeinated via a naturally derived sugarcane Ethyl Acetate process that preserves the vivid character of the underlying coffee. In the cup: bright lemon acidity, sour candy sweetness, and delicate red florals.

Finca Los Nogales is a family-run farm in Huila, managed by the Hernández family across generations. Their focus on quality and innovation is evident at every stage — from the selective hand-picking of ripe cherries through to meticulous fermentation management. Typica, one of the oldest and most celebrated Arabica varieties, is well suited to the high-altitude microclimates of Huila, where cooler temperatures allow the variety to develop its characteristic elegance, brightness, and subtle fruit and floral complexity.
THE PROCESS
The Washed and Sugarcane EA Decaf process at Finca Los Nogales involves:
