INTRO H&S's first-ever Bourbon Aji release, and a doozy — a high-intensity companion to their Pink Bourbon from the same farm, similarly juicy and intense but with the volume turned up. Where the Pink Bourbon's complexity is expressed with subtlety through acidity and florality, this one screams complexity through sweetness. Pink lemonade and pomegranate lead, with a rushing pineapple finish. In the cup: pink lemonade, pomegranate, and pineapple.

THE PRODUCER This lot comes from La Fortuna farm in Huila, sourced through Qima — the same farm behind H&S's Pink Bourbon release, here showcasing the far rarer Bourbon Aji variety for the first time.

THE PROCESS This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Bourbon Aji's naturally intense, tropical character to come through with a distinctly tactile mouthfeel, building the pink lemonade and pomegranate complexity that define this cup.

THE CUP Loud and complex — a screaming cup with punctuating sweetness, an interesting tactile mouthfeel, and a cacophony of tropical notes. Leans acidic, with a short, tropical finish that rushes in unlike its Pink Bourbon counterpart.
