INTRO

From the hills of Honduras — a long-standing partnership between DAK Coffee Roasters and the Caballero family, whose natural Catuaí has earned a permanent place on the cupping table harvest after harvest. Rich, layered, and deeply sweet, with a slight boozy edge that builds beautifully as the cup cools. In the cup: blackberry jam, cacao nibs, and nougat.

THE PRODUCER

The Caballero family are one of DAK's most trusted and enduring producer partnerships — a relationship built over multiple harvests on a foundation of consistency, quality, and shared values. Situated at 1,600 MASL in the Honduran hills, their farm produces naturally processed Catuaí of exceptional sweetness and character. Catuaí, a compact and productive variety developed as a cross between Mundo Novo and Caturra, is well established across Central America for its reliability and its ability to develop rich, fruit-forward sweetness under natural processing — qualities the Caballero family consistently unlock at their best.

THE PROCESS

The Natural process involves:

🍒 Hand-picking — Catuaí cherries selectively harvested at peak ripeness 🔍 Sorting — Defective and underripe cherries removed before drying ☀️ Whole-fruit drying — Cherries dried with fruit intact, allowing sugars and aromatics to be slowly absorbed into the bean 🔄 Regular turning — Turned throughout drying to ensure even fermentation and prevent defects 🌾 Hulling — Dried outer layers removed to reveal the green bean

The extended whole-fruit drying is the defining step — the bean rests inside the cherry throughout, slowly absorbing the fruit's sugars and developing the rich blackberry jam character, cacao depth, and nougat sweetness that define this lot, with a subtle boozy complexity that deepens as the cup cools.
