THE PRODUCER
Diego Horta grew up on his family's farm in Huila, learning the foundations of cultivation and processing from an early age. Over time he has built a reputation for careful variety selection and progressive processing, working with cultivars including Pink Bourbon, Geisha, Sidra, and Pacamara. His approach balances tradition with experimentation, and his commitment to ongoing education — forging relationships with coffee professionals in Pitalito and Neiva — has helped him produce some of the region's most distinctive lots.
The farm is a family-run operation, diversified with additional crops including plantains, avocados, and bananas to strengthen long-term resilience. Onyx have worked with Diego through their partnership with Equation Coffee for several years, using continuous feedback and repeat buying to refine results harvest on harvest.
THE PROCESS
The Dry Washed process at Diego Horta's farm involves:
🍒 Hand-picking — Cherries selected at peak ripeness 🔧 De-pulping — Skin removed before fermentation 🌬️ Dry fermentation — Fermented dry in parchment for twenty-four hours 💧 Channel washing — Washed to remove fermentation by-products ☀️ Raised-bed drying — Dried on raised beds for approximately fifteen days
The defining step here is the dry fermentation — twenty-four hours without water, which imparts a subtle complexity to the cup while keeping the overall profile clean and restrained, with minimal fermentation character in the final brew.
