The Naughty Dog is excited to present Ethiopia Gedeb Slow Dry, a beautifully layered natural coffee from Gedeb — one of southern Ethiopia’s most celebrated growing regions. This lot showcases how extended slow drying and thoughtful roasting can unlock rich fruit sweetness, vibrant brightness, and a finely balanced structure that works stunningly across brew styles.

The Producer:

This coffee comes from smallholder growers in the Gedeb district of the famed Yirgacheffe region, where traditional agricultural knowledge meets high‑altitude terroir. Farmers harvest ripe cherries by hand and deliver them for processing where meticulous care and generations‑old practices help elevate quality and complexity in every season. The region’s diversity of microclimates and cool nights contribute to intense aromatic profiles and natural clarity that define Gedeb coffees.

The Process:

The slow dry natural method at the heart of this lot begins with fully ripe cherries being spread on raised beds and dried slowly over an extended period — much longer than standard naturals. By carefully monitoring and turning the cherries throughout this slow drying, sugars and fruit components are drawn deeply into the bean, resulting in richer sweetness and deeper flavour complexity without sacrificing cleanliness.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
