The ProducerThis lot comes from Altos Guayabos, a farm located in the Ortega area of Tolima, deep in the Colombian Andes. The farm is operated by Aristóbulo Rayo, a producer known for his experience, attention to detail, and respect for both tradition and innovation.
At 1,830 meters above sea level, the region’s high altitude, rich soils, and stable microclimate provide ideal conditions for cultivating Geisha—one of the world’s most prized and aromatic coffee varieties. Here, the variety develops clarity, structure, and a refined sweetness that makes it a perfect canvas for more experimental post-harvest work.
The ProcessThe coffee is first washed, ensuring a clean, transparent base that highlights the inherent elegance of the Geisha variety. After fermentation and washing, the green coffee is aged in wooden barrels previously used for Caribbean rum.
This barrel-aging stage is carefully monitored to allow the coffee to absorb subtle aromatic compounds—notes of rum, vanilla, and warm spice—without overpowering the coffee’s natural character. The result is a rare balance: spirit-inspired depth layered onto a clean, vibrant foundation.
