Intro

Summer is the season of adventure—and sometimes the greatest journeys begin in a cup. Pirate Rum is a bold, limited-edition release from The Naughty Dog that bridges the worlds of specialty coffee and Caribbean spirits. Expressive, aromatic, and unmistakably playful, this coffee is designed to transport you straight to sun-warmed decks, wooden barrels, and tropical air.

Whether brewed as filter or pulled as espresso, Pirate Rum delivers a memorable experience that feels both indulgent and refreshingly unconventional.

The Producer

This lot comes from Altos Guayabos, a farm located in the Ortega area of Tolima, deep in the Colombian Andes. The farm is operated by Aristóbulo Rayo, a producer known for his experience, attention to detail, and respect for both tradition and innovation.

At 1,830 meters above sea level, the region’s high altitude, rich soils, and stable microclimate provide ideal conditions for cultivating Geisha—one of the world’s most prized and aromatic coffee varieties. Here, the variety develops clarity, structure, and a refined sweetness that makes it a perfect canvas for more experimental post-harvest work.

The Process

The coffee is first washed, ensuring a clean, transparent base that highlights the inherent elegance of the Geisha variety. After fermentation and washing, the green coffee is aged in wooden barrels previously used for Caribbean rum.

This barrel-aging stage is carefully monitored to allow the coffee to absorb subtle aromatic compounds—notes of rum, vanilla, and warm spice—without overpowering the coffee’s natural character. The result is a rare balance: spirit-inspired depth layered onto a clean, vibrant foundation.

In the Cup

From the first aroma, Pirate Rum is instantly evocative. Coconut and caramel rise from the cup, joined by a soft, unmistakable rum-like warmth. On the palate, a lively acidity keeps the profile bright and energetic, while sweet tones recall sun-heated wood, molasses, and exotic fruits.

The finish is long, smooth, and gently boozy—never alcoholic, but richly atmospheric. Brewed as filter, the coffee highlights its aromatic complexity and sweetness; as espresso, it leans into caramel depth and rum-barrel intensity.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
