Intro

This Colombia from El Paraíso is a clear example of how modern, precision-driven processing can elevate coffee into something truly memorable. Sweet, juicy, and beautifully structured, this is a filter coffee that unfolds in layers - vibrant at first sip, then increasingly rich and comforting as the cup cools


El Paraíso is run by Diego Samuel, a producer known for pushing boundaries while maintaining absolute control over quality. Located in Tolima’s high-altitude landscape, the farm benefits from slow cherry maturation, which builds natural sweetness and complexity. While Castillo is one of Colombia’s most common varieties, Diego’s meticulous approach to fermentation transforms it into something entirely distinctive, showcasing just how expressive this cultivar can be when treated with care and intention.

The Process

This lot is processed using a washed anaerobic method with a Double PO₂ fermentation, one of the most advanced techniques in modern coffee processing. Cherries ferment in oxygen-free environments under carefully controlled pressure and timing, enhancing sweetness and fruit intensity. The “double” stage allows even finer control over flavor development. After fermentation, the coffee is washed, bringing clarity, balance, and precision to the final cup—no heaviness, just clean definition.

In the Cup

Expect a distinctly sweet and lively profile with a pleasantly elevated yet rounded acidity. Juicy red plums and fresh raspberries lead the way, giving brightness and fruit depth. As the cup opens, warmer dessert-like notes emerge—soft cinnamon roll spice and the indulgent richness of chocolate fondant. The result is a harmonious, layered, and highly transparent cup where each flavor has space to shine, making it especially rewarding on filter brew methods.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
