Paola and Carlos Trujillo have worked at Finca Patio Bonito with a consistent emphasis on quality, detail, and respect for the local terroir. The Cauca region is celebrated for its high altitudes, stable climate, and cooler nights — conditions that slow cherry maturation and give coffees from this area their characteristic clean acidity and refined aromatic profile. Aji Bourbon trees growing at 1,700 MASL ripen slowly and build a natural complexity and sweetness that the clean washed process is ideally suited to revealing. Aji Bourbon is a variety grown primarily in Huila and Cauca — colloquially referred to as "Bourbon Aji" though genetic testing confirms no relation to Bourbon. It is 100% Ethiopian Landrace, belonging to the Core Ethiopia group of varieties alongside Chiroso, Sidra, Gesha, and Pink Bourbon. Its potential for vivid, botanically expressive cup profiles is increasingly well documented, and this clean washed expression from Patio Bonito showcases the variety's inherent brightness and fruit-forward character with exceptional clarity.
