From Jhoan Vergara's Las Flores in Pitalito — a washed Tabi of extraordinary lightness, elegance, and floral complexity from one of Huila's most celebrated and progressive farms. Crystal clear in structure and beautifully developed in aromatic profile, with a pleasant higher acidity that adds sparkle and life. In the cup: hibiscus, rosehip flowers, orange, and a refined spice finish.

THE PRODUCER

Jhoan Vergara's Las Flores farm in Pitalito has become one of Huila's most respected addresses for both conventional and experimental processing — a reputation built on meticulous attention to detail at every stage. Tabi trees grow at 1,700–1,790 MASL, where cooler temperatures slow cherry development and allow the variety's natural sweetness, lively acidity, and elegant floral-fruity profile to develop fully before harvest. The autumn 2025 harvest reflects the best of these conditions — the kind of patience that translates directly into the cup.

Tabi is a variety developed by Cenicafé as a cross between Timor Hybrid, Typica, and Bourbon — meaning "good" in the Guambiano indigenous language. Designed for disease resistance and quality potential at altitude, it produces a cup of exceptional body, syrupy sweetness, and tropical complexity in the right conditions. In Jhoan's hands at Las Flores, and under the clean washed process, its inherent florality and refined acidity are given full expression.

THE PROCESS

The Washed process at Las Flores involves:

🍒 Hand-picking — Tabi cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 💧 Water bath — Beans thoroughly washed in clean water to remove all residual pulp and sugars ☀️ Raised African bed drying — Dried on raised beds with constant turning to stabilise moisture content evenly

The thorough water-washing and clean fermentation are the defining steps — by removing all residual sugars and pulp, the process reveals the intrinsic floral and citrus character of the Tabi in its purest form, producing the crystal-clear body and brilliant, lively acidity that define this lot.

THE CUP
