This is September Coffee's first collaboration with Sarai Jimenez, and her Guatemalan Red Catuai made an immediate impression at their cupping table. Grown at Finca El Aguacate in Jumaytepeque, Santa Rosa, it's a coffee of elegant balance — sweet, creamy, and softly citric — the kind of accessible yet refined filter coffee that welcomes repeated brewing.

THE PRODUCER

Sarai Jimenez cultivates Red Catuai at Finca El Aguacate in the Santa Rosa department of Guatemala, a region valued for its stable climate, well-defined seasons, and fertile volcanic soils. Her careful approach to picking and processing has produced a coffee that sits confidently in the specialty bracket, offering a clean and reliable expression of the Catuai variety. September notes this is a debut feature for Sarai, and they look forward to continuing the relationship.

THE PROCESS

The Washed process at El Aguacate involves:

• 💧 Washing & Fermentation — Traditional wet process with controlled fermentation
• ☀️ Raised Bed Drying — Dried on raised beds until stable

The clean washed process emphasises the inherent sweetness and soft acidity of the Red Catuai variety, producing a cup that is approachable and consistent.

THE CUP

A creamy body and soft citric brightness make this an incredibly easy-drinking filter coffee. The vanilla and cashew notes give it a dessert-like sweetness that persists through the finish.
