Andrés Martinez is a dear friend of the September team, and this Pink Bourbon lot from Finca El Sendero is nothing short of mouthwatering — juicy, sparkling, and confectionary from start to finish. Located in the south of Cauca, close to Nariño, the farm benefits from mineral-rich soils that produce distinctive terroir in every cup.

THE PRODUCER

Andrés came to coffee with a background in biochemical engineering and coffee processing, having previously worked at Finca El Paraiso. He now focuses entirely on sourcing, growing, and processing his own lots across two farms: Los Capachos and El Sendero, both in Florencia, Cauca. His approach combines organic handling with the protection of native species to preserve soil health and the unique character of his terroir.

THE PROCESS

The Semi-Washed process at El Sendero involves:

• 🍒 Cherry Sorting — Hand-picked and sorted at peak ripeness
• 📅 Cherry Fermentation — 24-hour saturated fermentation in cherry mucilage
• 💧 Traditional Washed — Rinsed and processed in the conventional washed style
• ☀️ Drying — Dried on raised beds

The combination of cherry fermentation and traditional washing creates the sparkling, clean profile September refers to as "semi-washed" — retaining the brightness of a washed coffee with added complexity from the mucilage contact.
