INTRO Sourced through Onyx's long-standing relationship with Red Fox Coffee — Yukro is produced by smallholder farmers in Wanja Kersa, in Ethiopia's western Agaro region. Agaro's earlier harvest makes this one of the first fresh washed Ethiopian coffees to arrive each year, and meticulous processing at Yukro delivers a clean, sweet, floral profile with remarkable longevity. In the cup: apricot, barley tea, bergamot, and caramel.

THE PRODUCER Yukro is produced by 579 smallholder farmers in Wanja Kersa, a community within the Geera district of Agaro. Farms here sit between 1,800 and 2,200 meters and are typically very small, ranging from 0.1 to 2 hectares, with coffee as the primary source of income, grown in fertile sandy-loam soils and intercropped with maize and false banana for shade. Agaro's growing season runs earlier than many of Ethiopia's better-known regions, with harvest from mid-October through late January — among the first Ethiopian coffees to arrive each year, yet unusually slow to lose vibrancy afterward. The washing stations of Agaro were established through a TechnoServe initiative focused on improving processing and helping producers earn better prices for higher-quality coffee.

THE PROCESS At the Yukro washing station, ripe cherries are mechanically depulped using Penagos equipment, then soaked overnight to remove any remaining mucilage. The coffee dries on raised beds for six to eight days, with frequent turning to promote even drying and a clean, consistent cup.

The overnight soak following mechanical depulping is the defining step — it's what builds the clean, sweet, floral consistency behind the apricot, bergamot, and caramel character that define this cup.
