From Ebert Huaman Villegas at Finca Artemira in Cajamarca — a young, determined producer who has rapidly established himself as one of Peru's most exciting voices in specialty coffee. This anaerobic washed Catuai is fruit-forward, floral, and refreshingly clean. In the cup: gala apple, peach, cantaloupe, and white florals.

THE PRODUCER

Finca Artemira is a family farm named by Ebert in honour of his mother, who raised all five of her children after the early passing of their father. The farm has been growing coffee and raising cattle for over 40 years, but it is under Ebert's leadership since 2017 that it has undergone a remarkable transformation — planting new varietals across new hectares, investing in cultivation techniques and processing methodology, and embracing regenerative agriculture through agroforestry systems that prioritise soil health and biodiversity.

Ebert has pursued formal education in coffee through Central Café y Cacao, a Peruvian organisation dedicated to improving production and processing standards, and his growing reputation is reflected in competition results — 6th place at Expo Cajamarca in 2022 and 18th at the Cup of Excellence in 2023. Across 15 hectares of coffee and one hectare of fruits and vegetables, Finca Artemira now cultivates Catuai, Geisha, Pink Bourbon, Marshell, and other varietals, with each processed with meticulous care to showcase the distinct terroir of Cajamarca's high-altitude growing conditions.

THE PROCESS

The Anaerobic Washed process at Finca Artemira involves:

🍒 Hand-picking — Catuai cherries selectively harvested at peak ripeness 🔒 Anaerobic fermentation — Cherries sealed in an oxygen-free environment to develop complexity and aromatic depth 🔧 Depulping — Outer skin removed after anaerobic fermentation 🧪 Secondary fermentation — Depulped beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed to remove all fermentation residue ☀️ Drying — Dried to optimal moisture content

The anaerobic fermentation is the defining step — by sealing the cherries in an oxygen-free environment before depulping, Ebert directs the development of the Catuai's flavour compounds toward the fruit-forward, aromatic profile that defines this lot, while the subsequent washed processing preserves the clean, structured finish that makes it so refreshing.
