A staple mixed variety, mixed origin roast from Onyx. This moderately roasted coffee manifests in espresso as a rich, bold cup with complexity. In filter, expect the same complexity, stripped back enough for you to enjoy the layers of subtle notes. Southern Weather was developed by Onyx to be a centre ground, ideal for those who aren't sure  what to buy yet, with forgiving extraction qualities and perfect for all methods from French Press to Filter. An ideal for those wandering into specialty, and a workhorse for those who champion it.

Instant - Before you judge it, take a step back. Can you remember a time you were travelling, perhaps at a hotel with a terrible kettle, and just want an easy cup of coffee like the old days without having to weigh, grind, whip out an aeropress, find a mug LARGE enough for the aeropress... I sure can.

Onyx have taken their blends, fine tuned the extraction and freeze dried the resulting perfectly extracted coffee, and freeze dried it into easy packets ready to accept between 180g and 250g of boiling water depending on your strength preference. Done, a perfect cup.

That doesn't mean we all stop brewing ourselves though! The Onyx Instant series is designed for those generally on the go, or to pop in the shelf, so that you always have good coffee ready to go in a minute. Freshly brewed is always better! This is a way to get you 80% there without the hassle.

What is the roast recency?

Onyx recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
