INTRO
Having previously featured Natural processed coffee from Khalid Shifa's Echemo farm, this washed lot from his Bedeye Washing Station is everything hoped for — clean and elegant, soft and floral. Stone fruit and honey-like sweetness meet chamomile florals, just the kind of Ethiopian coffee that's easy to love. In the cup: stone fruit, honey, and chamomile florals.
THE PRODUCER
Khalid Shifa is a third-generation coffee farmer in Limmu, Gomma, using organic farming practices and agroforestry to build resilience and microbial diversity in his soil. This relationship began with a Natural lot from his Echemo farm the previous harvest, and continues to grow across Khalid's different projects through importing partner Belco.
THE PROCESS
This lot is Washed, a method that removes the fruit before fermentation and drying — allowing the Ethiopian Landrace variety's naturally delicate, velvety character to come through, building the stone fruit sweetness and chamomile florality that define this cup.
