Buku Abel – Guji, Ethiopia (Natural)

The first release from Ethiopia's 2025 harvest has landed – and it's a stunning start. This natural-processed lot from the Guji zone delivers everything we love about the region: lifted florals, bright fruit character, and a juicy, refined sweetness. Expect notes of blueberry, strawberry, and cherry, all wrapped up in a clean, vibrant cup.

Buku Abel is a washing station located high in the Guji highlands at 1,900–2,100 masl. Perched on a sun-drenched hillside with cool winds and rich red soils, it offers ideal conditions for slow, controlled drying. Local producers bring freshly picked cherries daily, sorting them carefully before drying on raised beds. While it’s a natural process, this lot is clean and precise – less boozy than anaerobic styles, but no less expressive.

Flavour Notes: Blueberries, Strawberries, Amarena Cherries

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
