INTRO
An ingenious collaboration between Nestor and Adrian Lasso of El Diviso and Jhoan Vergara of Las Flores, developed for Lohas Beans — both farms known for experimental processing and diverse varietal plantings. A light roast with tropical fruit, candy-like sweetness, and apple juice character. In the cup: tropical fruit, candy-like sweetness, and apple juice.
THE PRODUCER
This coffee combines Yellow Colombia and Tabi varieties, grown across two experimentally-minded farms in Bruselas, Huila — a rich, nitrogen-dense volcanic region where cloud cover limits sun exposure, slowing cherry ripening and concentrating sugars into dense, complex beans.
THE PROCESS
This lot undergoes a dual fermentation process — an aerobic stage first, followed by anaerobic submersion, which brings out stone fruit characteristics. The coffee then undergoes hot and cold water quenching to preserve its profile, before drying naturally under a canopy.
The dual aerobic-then-anaerobic fermentation, sealed in with hot-and-cold water quenching, is the defining step — it's what builds the tropical fruit intensity and candy-like sweetness that define this cup.
