INTRO

This is September's second time featuring a lot from the Keramo site and washing station, run by Daye Bensa. This coffee highlights the sweet citrus and delicate florals we love in washed Ethiopian coffees. In the cup we taste sweet key lime pie, delicate florals, and juicy tangerine sweetness. This coffee has a light body and a sparkling lime finish.


THE PRODUCER

Daye Bensa was established as a producer in 1996 and has persevered through many challenges regarding coffee growing and exporting in the Sidama region. He actively works with various community outgrowers that bring their cherries to a central washing station such as Keramo. The altitude of the Keramo site helps produce higher-density seeds with exceptional quality potential.


THE PROCESS

The Washed process at Keramo Washing Station involves:

  • 🍒 Hand Picking — Cherries picked at peak ripeness
  • 💧 Floating — Water flotation removes defects
  • 🔧 De-Pulping — Same-day de-pulping on day of harvest
  • 💦 Wet Fermentation — 36–72 hours fermentation in water
  • ☀️ Raised Bed Drying — Closely monitored drying on raised beds

The high altitude and meticulous processing create clean, bright coffees with structured acidity.


THE CUP

Showcases the sweet citrus and delicate florals characteristic of Sidama washed coffees. Sparkling lemonade, berries, and stone fruit with a light body and a sparkling lime finish. A clean, bright Ethiopian coffee with exceptional clarity.

What is the roast recency?

September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
