INTRO

September's first year working with Gildardo Lopez. His coffees are well known and highly praised — his family has won numerous awards in local cup competitions, and year over year, their Pink Bourbon impresses the most demanding clients.


THE PRODUCER

Gildardo's farm, El Calamar, sits high in the mountains of Paicol on the western edge of Huila. Gildardo is a husband to Yolanda Bolaños and a father to four children ranging in age from 20–25. In recent years, his family has won numerous awards in local cup competitions including the inaugural Copa de Oro. They have also planted a small amount of Gesha alongside their prized Pink Bourbon.


THE PROCESS

The Washed process at El Calamar involves:

  • 🍒 Selective Harvest — Hand-picked at peak ripeness
  • 💧 Floating — Floated to remove any defects
  • 🧪 Fermentation — Fermented for 30 hours in cherry
  • 🔧 Depulping — De-pulped, then dry-fermented in parchment for an additional 48 hours
  • 💧 Washing — Thoroughly washed
  • ☀️ Drying — Dried on raised beds for 20–25 days

THE CUP

A vibrant profile of pink lemonade with a deep sweetness reminiscent of cotton candy melting in the mouth. Citric acidity and intense florals throughout. This coffee has a silky body and a clean finish.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8–12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast).
