From the Holguín family's Finca Inmaculada in the lush growing conditions of Valle del Cauca, this washed Pink Bourbon is a vibrant and expressive lot produced in collaboration with the Fellow Farms Project. Vivid hibiscus florals, deep plum sweetness, and a zingy lime acidity create a profile that is both refreshing and complex — a testament to what exceptional Pink Bourbon can achieve under precise washed processing.
The Fellow Farms Project connects specialty roasters directly with exceptional Colombian producers, fostering long-term relationships built on quality and transparency. Finca Inmaculada is one of the project's flagship farms.
THE PRODUCER
The Holguín family have cultivated coffee at Finca Inmaculada for generations, farming across altitudes of 1,500 to 1,700 MASL in Colombia's Valle del Cauca department. The farm is ideally situated for the production of high-quality Pink Bourbon, a variety that flourishes in the region's temperate climate and well-drained volcanic soils.
Through their partnership with the Fellow Farms Project, the Holguíns have been able to invest in infrastructure, processing improvements, and sustainable farming practices that have elevated the quality and consistency of their lots year on year. Finca Inmaculada has become synonymous with some of the finest washed Pink Bourbon available from Colombia.
THE PROCESS
The Washed process at Finca Inmaculada involves:
- 🍒 Selective Harvest — Hand-picking of fully ripe Pink Bourbon cherries at optimum maturity
- 🔧 Pulping — Mechanical removal of the coffee cherry skin
- 💧 Wet Fermentation — Extended fermentation in water tanks to break down and remove mucilage
- 💧 Washing — Thorough washing in clean water channels to remove fermentation residue
- ☀️ Raised Bed Drying — Slow, even drying on raised African beds to lock in clarity and acidity
The washed process produces exceptional transparency in the cup, allowing the inherent floral and fruit character of the Pink Bourbon variety to express itself with precision and clarity.

A beautifully transparent washed Pink Bourbon that showcases the variety's capacity for vivid, layered complexity. Hibiscus florals lead the aromatics, giving way to deep plum sweetness mid-palate, with a lively lime acidity lifting the finish. What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6–12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 — should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
