THE PROCESS Fermentation takes place in open tanks, with temperature, pH, and duration monitored and adjusted in real time. No added yeasts or bacteria are used in this lot — instead, the natural microbial population is guided throughout fermentation to avoid over-fermentation, stagnation, or spoilage.

This real-time, guided fermentation without added cultures is the defining step — it's what preserves Geisha's classic lemon, jasmine, and honey character with precision, rather than pushing the cup toward more experimental territory.
