Octavio Rueda, El Mirador - Pink Bourbon (3rd Harvest) - Washed

Octavio Rueda produces some of the most compelling Pink Bourbon SEY has tasted from Colombia—coffees marked by exceptional clarity, complexity, and depth. In the cup, SEY finds tropical fruit, mango, pomegranate, and hibiscus.

The process is meticulous: hand-picked at peak ripeness, floated to remove defects, and held in-cherry overnight. The cherries are then de-pulped and fermented underwater for 80 hours before being washed and dried on raised beds to a final moisture content of 10.5%.

SEY’s sourcing work is split between cupping labs, revisiting long-standing producer partners, and exploring new relationships. Many smallholder farmers in Colombia have never had their coffees tasted by a specialty buyer. SEY is committed to discovering these voices. Octavio’s coffee first stood out on a blind cupping table, and SEY has worked with him ever since. Year after year, his Pink Bourbon continues to be a standout

What is the roast recency?

Sey doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Sey typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
