INTRO SEY's first year working with Héctor Londoño's coffee — part of an ongoing project exploring the Chiroso variety specifically in Urrao. A bright tropical profile: melon sweetness with soft florals running throughout. In the cup: melon and soft florals.
THE PRODUCER This is the first year buying coffee from Héctor Londoño. The Chiroso project in Urrao has been built over a number of years, with each new season bringing new producers into the fold — to date, one of the most successful projects developed, and one that continues to grow.
Chiroso is a relatively new variety, primarily grown in Antioquia, Colombia, only recently gaining attention for its cup quality potential and beginning to spread. It's been genetically identified as an Ethiopian Landrace, though no more specific detail is currently available. This lot is part of an ongoing buying programme in Urrao developed with exporting partner The Coffee Quest — its precise path to cultivation in this particular region remains unknown, but its cup quality is extraordinary.
THE PROCESS Cherries are hand-picked at peak ripeness, floated to further remove defects, then held in-cherry for two days. After de-pulping, the coffee ferments underwater for an additional three days, before washing and drying on raised beds until moisture content reaches 10.5%.
The extended two-day in-cherry hold combined with three days of underwater fermentation is the defining step — it's what builds the bright tropical melon character and soft florality that define this cup.
THE CUP Bright and tropical — melon sweetness runs throughout, with soft florals adding a delicate lift. A promising first showing from a new addition to the Urrao Chiroso project.
