THE PRODUCER

Cassis is a washed lot from Karimikui, part of the Rungeto Farmer's Cooperative Society, bursting with the hallmark vibrancy of Kirinyaga. Cultivated on the slopes of Mount Kenya at 1800 masl, it offers deep, jammy berry notes balanced by floral and citrus complexity, thanks to careful processing and sustainable practices at the factory.

The Alchemist is an experimental lot from Gasharu Farms, inspired by the emotional connection of the producer's family to the coffee community as a whole. Coffee farming, processing, and distribution for consumption have been kept in silos, and their family believes this can change. The idea of this coffee is to provide the most authentic coffee cup of Rwandan coffee to coffee lovers, making the consumer think of the producer as the grower whilst also keeping the buyer in mind when processing the coffee.

Milky Cake is Diego Bermudez's thermal-shock Castillo lot from Colombia, crafted to sustain a daily routine with a highly unique, sweet-forward profile.

THE PROCESS

After testing out several different options, we are very happy with the result as the aromas and the coffee characteristics are retained. The coffee has been individually dosed, sealed in bags and nitrogen-flushed by Steeped, and the coffee is roasted by us.

Across the three coffees in this set:

• 🚿 Cassis (Washed) — Traditional washed process at Karimikui Factory, preserving deep jammy berry notes with floral and citrus complexity
• 🍒 The Alchemist (Anaerobic Natural) — Experimental anaerobic natural process on Red Bourbon, developed with an emotional connection to authentic Rwandan coffee culture
• 🔒❄️ Milky Cake (Anaerobic + Thermal Shock) — A 48-hour anaerobic step followed by a thermal shock wash, yielding a highly unique, sweet profile

Each bag is individually dosed, sealed and nitrogen-flushed to retain freshness—just add hot filtered water to brew.

THE CUP

Cassis delivers dark berries, currant jam and rosehip—deep and jammy with floral, citrus complexity. The Alchemist brings tropical fruit, cocoa and ripe fruits in a complex, elegant cup. Milky Cake rounds out the set with cardamom, pistachio, vanilla cake and honey—a highly unique, dessert-like sweetness. These brew bags are ideal for home, travels or outdoor adventures without compromising on taste.
