Las Perlitas – Colombia (Washed Chiroso)

One of the standout washed Colombians we’ve tasted this year. This lot is 100% Chiroso – a rare Ethiopian variety now cultivated in Colombia – and it shows. Bright, elegant, and layered with notes of honey, lemon peel, and rhubarb. Think classic washed Ethiopian character, with Colombian clarity and structure.

Las Perlitas is a community lot, made up of small, traceable contributions from producers across Huila, Antioquia, and Nariño. Farms sit between 1,600 and 2,100 masl, where high altitude and variety selection come together to elevate cup quality. The producers behind this lot are dedicated to craft – constantly experimenting, refining processes, and chasing excellence in every harvest.

Flavour Notes: Honey, Lemon Peel, Rhubarb

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
