INTRO

The second harvest pass of William Ortiz's Chiroso — following a first harvest that was one of the highest-scoring Colombian coffees of the year. Softer and more complex than the first pass, with a tropical profile led by melon and lime.

THE PRODUCER

William Ortiz is a newer addition to the ongoing exploration of Huila as a growing region, and this marks the second consecutive purchase from his farm. Producing one exceptional lot is hard enough — doing it twice in a row is rarer still. William currently grows Caturra, Pink Bourbon, and Chiroso, with this harvest seeing both his Pink Bourbon and Chiroso selections purchased.

Chiroso itself is a relatively new variety in Colombian specialty coffee, genetically identified as an Ethiopian Landrace, though its exact origins and path to cultivation in regions like Huila and Antioquia remain unclear. What's certain is its cup quality — a potential that's driving a growing buying programme around the variety.

THE PROCESS

Cherries are hand-picked at peak ripeness, then floated to remove any remaining defects. Held in-cherry overnight before being de-pulped, the coffee undergoes a 36-hour dry fermentation, is washed, then dried on raised beds until moisture content reaches 10.5%.

THE CUP

Softer and more layered than the first pass off this farm — tropical fruit, ripe melon, and a clean lime acidity that keeps the cup lively without ever feeling sharp. A lovely example of how much a second harvest can reveal about a producer's range.
