INTRO

From Edilberto's Bellavista farm in Santa María — a washed Tabi of clean, expressive character from a three-hectare family farm established 32 years ago on the scenic hills of Huila. Sourced through Cuatro Vientos, a family-owned exporter with deep roots in the region. In the cup: red grape, peach, and orange.

THE PRODUCER

Edilberto established Bellavista 32 years ago in Santa María, where he built his home and raised his family. The name means "beautiful view" in Spanish — a fitting tribute to the picturesque Huilan landscape that surrounds the three-hectare farm. Around 13,000 coffee trees grow alongside fruit trees and a small vegetable garden, with six people employed in total: five permanent workers handling daily maintenance and processing, and one seasonal picker during harvest.

This lot was sourced through Cuatro Vientos — a family-owned business founded in 2018 by the Gonzalez family and named after their first farm. General Manager Yonatan Gonzalez is a third-generation producer with a background in logistics whose father was a classic Colombian parchment buyer. The company operates across northern and southern Huila from three purchasing points in Acevedo, Santa María, and Algeciras, giving them access to coffee for six months of the year.

Tabi is a variety developed by Cenicafé as a cross between Timor Hybrid, Typica, and Bourbon — the name meaning "good" in the Guambiano indigenous language. Designed for disease resistance and quality potential at altitude, it produces a cup of exceptional body, syrupy sweetness, and refined fruit character at 1,850 MASL in Santa María's cool mountain conditions.

THE PROCESS

The Washed process at Bellavista involves:

🍒 Hand-picking — Tabi cherries selectively harvested at peak ripeness 💧 Flotation — Floated to remove defects before fermentation 🧪 Fermentation — Cherries fermented in plastic bags or tanks 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried on marquesinas or patios to optimal moisture content

The traditional Huila washed processing — fermentation in bags or tanks followed by careful drying — is the defining step, allowing the Tabi's inherent red grape depth, peach sweetness, and orange brightness to express themselves with the clean, balanced clarity that Bellavista's meticulous approach consistently delivers.
