Process: Washed – Hand-picked at peak ripeness, floated to remove defects, de-pulped, Grade 1 density separated, fermented underwater for 36 hours, and dried on raised beds for 10–14 days.

About This Coffee

Yaye Chericho is our second release of the season from Arbegona, a region that continues to yield some of our highest-scoring lots in all of Ethiopia. This late-harvest selection was one of the last to arrive—and it was well worth the wait.

Arbegona sits high in the Sidama zone, with elevations exceeding 2,200 meters and cool, misty mornings that extend cherry maturation and concentrate flavor. The Yaye Chericho site, where this coffee was processed, is renowned for its meticulous fermentation and drying practices that bring out remarkable clarity and balance in the cup.

This is our second year working with Yaye Chericho, and once again, the results are exceptional. The coffees from this area consistently express the elegance and complexity that have made Sidama—and particularly Arbegona—synonymous with world-class washed coffees.

What is the roast recency?

SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY  typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
