THE CUP
The first harvest of the new season from La Casita — and one of the most anticipated arrivals from Urrao. This early-pick Chiroso is stunningly bright and structured, showing ripe tropical fruit, white tea, and a juicy, peach-like sweetness. A delicate and vibrant expression of one of Colombia’s most exciting varieties.

THE PROCESS
Cherries are hand-picked at peak ripeness, floated to remove defects, and held in sacks for up to two days before being transported by horse down the mountain and by car to the mill. They are de-pulped and fermented underwater in stainless steel tanks for five days, then dried slowly until reaching 10.5% moisture.
WHY WE LOVE IT
La Casita may be tiny, but its impact is huge. Perched at one of the highest elevations in Urrao, David Berrio’s micro-farm continues to deliver breathtaking Chiroso lots marked by clarity, florality, and depth. This first-pass harvest is bright, sweet, and full of promise — a beautiful start to the season and a reminder of why Urrao remains one of Colombia’s most exciting frontiers for coffee.
What is the roast recency?
SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
