Intro:
SEY is thrilled to present Bukeye; Gaharo Hill – Burundi, a remarkable washed coffee from the iconic Bukeye washing station at the foot of Gaharo Hill. Celebrated for its long history of producing expressive Burundian coffees, this lot showcases a sweet, spicy, and aromatic filter profile — a wonderful bridge between traditional Burundi character and refined specialty clarity.
The Producer:
This coffee is sourced through the Long Miles Coffee Project, a long‑term initiative in Burundi that supports thousands of smallholder farmers. Bukeye was the very first washing station established by Long Miles, built brick‑by‑brick by local communities and now standing as a cornerstone of their work. The same farmers who helped create Bukeye continue to deliver ripe cherries here each season, carrying forward both tradition and quality in every harvest.
The Process:
Bukeye; Gaharo Hill – Burundi is crafted with meticulous washed processing. Cherries are hand‑picked at peak ripeness, floated and hand‑sorted, then depulped on the day of harvest. The beans undergo two stages of fermentation — first dry for ~12 hours, then submerged in fresh water for ~24 hours — before being rinsed, density graded, and slow‑dried on traditional African raised beds for 16 – 20 days until optimum moisture is reached. This careful, traditional handling builds clarity, sweetness, and structure in the cup.
The Cup:
In the cup, this Burundian washed coffee is richly layered and inviting. Sweet baked apple 🍎 notes form the heart of the profile, complemented by luscious honey 🍯 sweetness and warm, cozy gingerbread 🍪 spice. The overall character is clean yet comforting — bright and satisfying, with gentle sweetness and subtle spice that linger on the palate.

What is the roast recency?
SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
