This marks September’s second year partnering with Sebastián Ramírez and Finca El Placer, and this White Honey Geisha may be one of the most expressive lots yet. It’s an aromatic, intensely sweet, wildly floral coffee—bold, playful, and unforgettable.

In the cup, expect a sweet, floral explosion reminiscent of Froot Loops, layered with lavender and jasmine florals. A deep honeyed sweetness and ripe white grape character round out the profile, finishing with a long, silky texture that lingers beautifully.

ABOUT THE PRODUCER

Sebastián Ramírez, a fourth-generation coffee producer from Quindío, left law studies to return to coffee full-time—a decision that has made him one of the most exciting innovators in Colombia today. His farm, El Placer, covers 14 hectares at 1,650–2,000 meters and is shaded by native trees, creating an ideal ecosystem for slow maturation and high complexity.

Sebastián’s approach to processing is meticulous and highly technical. For this lot:

PROCESSING

  • Cherries are hand-selected to ensure 95% ripe fruit.

  • Fermented anaerobically in 200L tanks at a stable 18°C, with COâ‚‚ injection and oxygenated water submersion for 48 hours.

  • Dried in a controlled two-phase slow-drying system under shade netting.

  • Rested in GrainPro for 15 days to stabilize flavor.

The combination of White Honey processing and carbonic maceration creates a cup that is both deeply sweet and intensely aromatic—a signature of Sebastián’s experimental mastery.

A truly standout Geisha: playful, floral, sweet, and absolutely memorable.


What is the roast recency?

September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
