Intro

This is our fourth season working with the producers of La Muralla, and each year this field blend continues to impress. By combining multiple varieties grown side by side, this lot captures both the clarity of washed Colombian coffees and the playful complexity that comes from varietal diversity. The result is a coffee that feels vibrant, expressive, and beautifully balanced.

The Producer

La Muralla is an informal collective of young producers in San Agustín, one of southern Huila’s most exciting and dynamic coffee-growing areas. Many of these farmers cultivate only small amounts of each variety, making it difficult to export single-varietal lots on their own. By creating a regional field blend, these producers are able to share their work with the wider specialty coffee world. This is one of the youngest producer groups we work with, and their energy, curiosity, and commitment to quality shine through in the cup.

The Process

All cherries are hand-picked at peak ripeness and processed as washed coffees. After careful depulping and fermentation, the coffees are washed clean and dried slowly on raised beds. Processing each component with consistency ensures clarity and structure, allowing the blend to highlight both terroir and varietal character without losing balance.

In the Cup

The cup opens with juicy cherry sweetness and a playful candy-like note reminiscent of pink Starburst. Bright citrus follows, led by key lime and lifted by fresh tangerine acidity. The mouthfeel is silky and smooth, with a balanced acidity that carries through to a long, clean, and distinctly citric finish. Clean yet expressive, this is a field blend that feels both approachable and exciting.


What is the roast recency?

September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
