This marks September's fourth crop working with Irineo Ramirez, one of our earliest and most trusted producing partners. Irineo’s coffees have become a cornerstone of our menu—reliable, expressive, and deeply comforting.

In the cup, expect a sweet, nut-forward profile with notes of hazelnuts, almonds, and baked apple, supported by a smooth milk chocolate sweetness. The body is creamy and plush, the acidity soft and gentle, and the finish long, sweet, and balanced. A truly versatile espresso that shines both on its own and in milk.

ABOUT IRINEO

Irineo lives in El Durazno, one of the more remote villages connected to Mataquescuintla—but also one of the highest, with elevations reaching up to 1900 MASL. Here, on a 3-hectare farm shared with his brothers-in-law, Gregorio and Rene Muñoz, Irineo cultivates a small but exceptional plot of Pache.

Despite the rugged terrain and isolation, Irineo continues to produce coffees marked by clarity, sweetness, and consistency—qualities that have made him one of our most cherished partners year after year.

What is the roast recency?

September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
