Intro:

September is thrilled to present Finca El Paraiso Sudan Rume, a rare and expressive Colombian microlot that highlights one of coffee’s most unique and heritage‑rich varieties. With a washed profile that is clean and elegant, this coffee brings forth vibrant citrus liveliness and delicate floral character — a standout choice for filter brews that reveal nuance and complexity. 

The Producer:

This coffee comes from Finca El Paraiso, where producer Alex Bermudez carefully tends his trees high in the mountains of Cauca. Sudan Rume is a particularly rare varietal with an heirloom lineage, and the harvest from El Paraiso is both limited and highly valued. September sources this lot through a trusted connection with coffee expert Eyder Martinez, ensuring traceability and insight into growing conditions and processing decisions that bring out the best qualities of this unique varietal.

The Process:

After selective hand‑picking of ripe cherries, this lot undergoes a double fermentation to develop depth of flavour. First, cherries ferment in their whole‑fruit state for 24 hours. Then, after depulping, a secondary fermentation in tanks with added natural mucilage carries on for roughly 48 hours, enhancing sweetness and complexity before the beans are traditionally washed and dried. This process strikes a balance between clarity and layered fruit expression, tailored to Sudan Rume’s delicate nature.

The Cup:

In the cup, this Sudan Rume delivers a bright and nuanced profile. Expect sparkling mandarin 🍊 acidity up front followed by fresh herbal 🌿 undertones that bring energy and structure. A floral finish 🌼 lingers beautifully, adding aromatic refinement and a gentle sweetness that carries through the sip. What is the roast recency?

September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
