“Elite” is the term once used by Gilberto Baraona to describe the century-old coffee trees growing at Los Pirineos. It was with cherries from these very trees that Gilberto secured second place in the 2019 Cup of Excellence—an achievement that speaks to the farm’s extraordinary potential.
Prolog has now visited Los Pirineos multiple times, and it’s evident—both in the precision of the work and the clarity in the cup—that Diego Baraona and his team are deeply committed to quality. This Elite Bourbon selection is a standout: silky, clean, and refined, with tasting notes of almond and high-grade chocolate.
Located in the Usulután region of El Salvador, Los Pirineos is managed by fifth-generation producer Diego Baraona, who took over operations in 2020 following the passing of his father, Gilberto. Diego now carries forward more than 130 years of family tradition in coffee cultivation, building on a legacy grounded in detail, innovation, and deep agricultural knowledge.
This particular lot is a Yellow Honey-processed Bourbon. After harvest, ripe cherries are pulped and left with a layer of sticky mucilage intact, then dried on raised beds under direct sunlight. The parchment is carefully turned for even drying, a process that spans 20 to 25 days depending on climate. The result is a cup that’s juicy and composed, with vibrant notes of sweet orange, hazelnut, and a creamy, rounded texture.

What is the roast recency?
Prolog doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Prolog typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
