Prolog is proud to be entering the fifth year of working with the dedicated group of producers behind the Roble Negro Wet Mill in Costa Rica. The results of this long-term collaboration continue to impress, delivering exceptional coffees year after year.
The relationship began in 2020 with Jorge Vasquez, the wet mill’s manager and its most prominent cherry contributor. This release features Jorge’s Red Catuai, a washed lot that speaks clearly of his skill and commitment to quality.
Over the years, Prolog has visited Roble Negro on three occasions, gaining deeper insight into the work being done there. Jorge and members of the team also joined Prolog in Copenhagen last summer during World of Coffee, further strengthening the partnership. It's clear from both sides of the exchange that Roble Negro is a mill built on rigorous quality control and thoughtful environmental practices.
Located between the Pacific slopes and the Central Valley, at elevations from 1,750 to 2,000 masl, the farm is rich in natural springs and forest cover—both of which contribute to the health of the surrounding ecosystem. The cup is structured, clean, and refined, with tasting notes of green apple, orange blossom, and sugarcane.

What is the roast recency?
Prolog doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Prolog typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
