Tropical Silk is Prodigal's second release from Finca San Antonio, and it’s nothing short of stunning. This anaerobic-washed Gesha is a vibrant, fruit-forward expression of Nariño’s high-elevation terroir — juicy, polished, and beautifully layered. With ripe tropical intensity and a velvety structure, it lives up to its name: pure silk in the cup.

THE PRODUCER — Finca San Antonio

Perched high in the mountains of Nariño, Finca San Antonio has quickly become one of Prodigal's favourite producing partners. Their careful cultivation and meticulous processing consistently yield coffees with clarity, tropical depth, and striking aromatic lift.

With each harvest, their Gesha stands out as a variety handled with intent — expressive yet refined, fruit-driven yet elegant.

THE PROCESS — Anaerobic Washed Precision

This lot undergoes a multi-stage fermentation process designed to amplify fruit while preserving Gesha’s inherent florals:

  1. 24 hours of whole-cherry fermentation, building sweetness and tropical depth

  2. Dry pulping, keeping mucilage intact

  3. 80 hours of anaerobic fermentation, developing winey berry notes and lifted acidity

  4. 20–22 days drying in parabolic dryers for uniformity and long-lasting stability

The result is a structured, juicy Gesha with clean tropical intensity.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

 


What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Prodigal coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
