Known for its cool temperatures, volcanic soils, and slow cherry maturation, this area consistently produces coffees with clarity, elegance, and layered sweetness. This lot (BW121) produces a comforting cup that balances classic structure with delicate fruit and floral nuance.
The ProducerEstela Pitti is a respected producer in the Volcán region, known for her careful stewardship of both land and coffee. At Los Cenizos, attention to detail in harvesting and processing is central to preserving the purity of variety. Her coffees are celebrated for their balance, sweetness, and clean expression of terroir—quietly confident.
The ProcessThis coffee is washed, allowing the inherent qualities of the Bourbon variety and Cerro Punta terroir to take centre stage. Ripe cherries are selectively harvested, depulped, and fermented under controlled conditions before being thoroughly washed and dried. The result is a clean, transparent cup with polished acidity and gentle sweetness.
In the CupThe cup opens with soft, elegant floral aromatics, leading into a juicy donut peach sweetness that feels ripe and comforting. As it develops, notes of dried fruits - think golden raisins and soft stone fruit - add depth and warmth. A lingering sugarcane sweetness ties everything together, giving the coffee a smooth, rounded finish. The body is silky, the acidity restrained and refined, making this an effortlessly drinkable cup.
