The Process
This lot is produced using the natural process, with ripe cherries carefully selected and dried whole. Drying is slow and controlled on raised beds, allowing sugars to develop gradually while preserving clarity and structure. The result is a fruit-forward profile that remains elegant and well-defined rather than overly funky.
In the Cup
The cup opens with juicy mixed berries, immediately followed by the sweetness of grape and the bright, tart lift of pomegranate. As it cools, a refined Earl Grey tea note emerges, adding aromatic depth and a gently drying, elegant finish.Â
