Native's latest Hyper Limited release showcases a rare and elegant expression of Sudan Rume, brought to us by Cesar Ledesma of Finca Betel in San Agustín, Huila. Known for its floral complexity and refined structure, Sudan Rume is already a special variety—but processed as a Honey, it becomes silky, sweet, and exceptionally clean.

THE PRODUCER

Cesar Ledesma is part of the new wave of meticulous small producers in southern Huila. His farm, Finca Betel, sits high in the mountains where cool nights and warm days create ideal conditions for slow, sugar-rich cherry development. Cesar’s approach is defined by precision, intentionality, and a deep respect for the purity of each variety he grows—making him uniquely suited to work with something as genetically delicate as Sudan Rume.

THE PROCESS — HONEY

This lot undergoes a carefully controlled Honey process, where the cherries are depulped but dried with a generous layer of mucilage still intact. This method allows natural sugars to caramelize slowly during drying while preserving the floral clarity Sudan Rume is known for.

The result is a cup that’s sweet, clean, and texturally plush—highlighting the variety’s floral delicacy without the intensity of fermentation-forward techniques.

Expect chamomile florals, toffee-like sweetness, and a bright, herbal lift of lemongrass. The texture is smooth and refined, carrying the flavors with clarity and grace.

What is the roast recency?

Native recommend brewing with beans that are at least two to three weeks off roast. All beans are roasted to peak flavour at around 6-9 weeks. We have the option to either purchase standard beans (no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

Filter or Espresso? Both!

All of Native's coffees are profiled to be as fantastic in filter as they are in espresso.
