Moonwake is excited to present Sergio Aranda Gomez: Finca Anaya Orange Washed Orange Bourbon, a playful and unforgettable Colombian coffee that blurs the line between coffee and citrus cocktail. This unique co‑fermented lot makes for a bright, lively filter coffee experience packed with sunny, effervescent character and floral nuance — a real conversation starter in the cup.


The Producer:

This lot comes from Finca Anaya, a family farm in Huila now led by Sergio Aranda Gomez, whose roots in coffee span generations. Based in San Adolfo on the fertile slopes of Huila, Sergio blends tradition with innovation in both cultivation and processing — always seeking expressive, distinctive microlots. The farm’s rich biodiversity and careful farm management help ensure healthy cherry development and potential for creative processing.


The Process:

This coffee uses an orange‑infused co‑fermentation that’s as creative as it sounds. After floating to remove defects, ripe cherries are mixed with yeasts and orange for a ~48‑hour pre‑fermentation. This aromatic base is then added to depulped coffee and fermented further at a warm ~40 °C for ~40 hours in sealed tanks. The elevated temperature and citrus pre‑ferment help open the bean’s pores and lock in vibrant fruit‑derived compounds. After fermentation, the beans are thoroughly washed and dried on traditional patios for about 10–15 days — resulting in bright, unusual expression.


The Cup:

In the cup, this lot is bright, effervescent, and delightfully “funky.” Think mimosa‑like sparkle 🍾, bold Sunny D‑style orange 🍊 sweetness, and delicate lavender 🌸 floral lift that lingers on the finish. Rather than a straightforward coffee profile, it evokes citrus spritz with floral depth, bringing a refreshing and playful dimension that’s perfect for light filter brews.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
