ABOUT THIS COFFEE & PRODUCER

Depending on who you ask, there are a few stories behind the name Finca Lord Voldemort, but the simplest answer is often the best—Deiro García is a big Harry Potter fan. A former microbiologist, Deiro has become one of Colombia’s most innovative and experimental coffee producers, known for his precise control of fermentation and his creative use of yeasts and fruit substrates to develop distinct sensory experiences.

At his farm in Pitalito, Huila, Deiro experiments relentlessly to push the boundaries of flavour and texture in coffee. This lot features the Ombligon variety, a rare cultivar named for its uniquely shaped cherry—ombligo meaning “belly button” in Spanish.

Processing begins with careful sorting of ripe cherries, followed by 36 hours of oxidation. The cherries are then depulped and placed in sealed tanks along with a fermented watermelon substrate—a mixture made from three-day fermented watermelon pulp inoculated with Saccharomyces cerevisiae yeast (commonly used in baking and winemaking). The coffee ferments for 48 hours, reaching a target pH of 3.5, before being washed and dried for 12 days to preserve its clarity and sweetness.

From the first sip, this coffee radiates juicy crown melon sweetness, a creamy Melona bar texture, and a crisp cantaloupe finish. Subtle herbal undertones of cucumber and mint add freshness and balance, making it as intriguing as it is satisfying.

In smaller milk drinks, it transforms into something reminiscent of melted melon ice cream—lush, smooth, and sweetly nostalgic.
