THE FARM

Sandra and Héctor purchased El Porvenir in 2006. The farm covers 12 hectares, with 5 under coffee and the rest preserved as natural forest. Around 20,000 Caturra trees form the backbone, alongside Tabi and young Pink Bourbon. From just two rust-resistant Caturra trees, Sandra and Héctor have propagated a new line they call Caturra Mejorado, now numbering 3,000 plants.

The farm is managed organically - no chemical fertilizers or pesticides. Instead, they produce their own organic fertilizer applied annually, supporting both soil health and surrounding biodiversity.

THE PROCESS

Cherries are hand-picked and sorted throughout the harvest, with a main season from late September to December. Fermentation runs 36–48 hours depending on variety (Caturra shorter, Tabi longer). Coffee is pre-dried on raised beds, then finished in a shaded drying house for 20+ days.

Flavour Notes: Dark Chocolate, Caramel, Berries

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
