Finca El Placer, Washed Pink Bourbon - Colombia
Karen Burbano, just 18, is the fourth generation in her family to grow coffee. Taught by her father, Don Jose - a pioneer in producing for the specialty market - Karen has absorbed his passion and precision, from harvesting ripe cherries to meticulous fermentation and drying.
After graduating in 2022, she was entrusted with a small plot of land at higher altitude, home to 3,000 Pink Bourbon trees. This first lot is the result of her care and her family's guidance.
Cherries are picked every 15 days and fermented in batches over 3–4 days, with each day’s harvest added to the mass. After a final 48-hour fermentation under water, the coffee is washed and dried in a solar dryer for 18–20 days.
Flavour Notes: Rosehips, Red Berries, Aromatic
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
