Gout & Co is excited to present Big Sur Finca Miraflores Cold Water Fermentation Washed Geisha, a refined and expressive washed Geisha from the Amazonas region of Peru. This lot combines the delicate purity of the Geisha varietal with an innovative cold water fermentation that brings heightened clarity and elegant fruit expression to the cup.
The Producer:
This coffee comes from Finca Miraflores, a high‑altitude estate in northern Peru’s Amazonas region known for producing specialty coffees with nuanced character. Grown in misty cloud‑forest conditions and harvested at peak ripeness, the Geisha cherries benefit from a cool microclimate and careful selective picking practices. This farm’s terroir — similar to some of the great high‑altitude origins — supports vibrant acidity and delicate floral aromatics.
The Process:
The “Cold Water Fermentation” approach used here begins with flotation sorting and a cold‑water soak that stabilises and selects cherries before depulping. The beans then undergo a prolonged (~100‑hour) cold spring water fermentation, where low water temperatures slow microbial activity and emphasise clean enzymatic development of sugars and precursors. After this stage, the coffee is thoroughly washed to remove mucilage and dried slowly to preserve nuance and clarity in the final cup.
The Cup:
In the cup, this Geisha is delicate yet expressive. Aromatics open with white floral 🌼 notes and soft perfume, while bright citrus 🍋 and bergamot 🍋 lift the profile with refreshing acidity. A gentle apricot 🍑 sweetness rounds out the mid‑palate, giving the coffee a lively yet refined flavour that evolves beautifully as it cools.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
