Flowerchild is thrilled to present Ernedis Rodriguez Sidra, a vibrant and intricately layered single‑origin coffee from one of Huila’s standout producers. This washed Sidra delivers bright purple‑fruit sweetness balanced with floral elegance and crisp clarity, creating an engaging and lively cup that shines in filter brewing.


The Producer:

Ernedis Rodriguez is the passionate owner and operator of Finca El Paraiso in Gigante, Huila, where he has blended traditional farming with forward‑looking processing and infrastructure improvements. Over time Ernedis has upgraded his wet‑mill and begun composting and eco‑washing techniques to reduce environmental impact and improve consistency. While he now manages teams for cultivation, picking, and fertilisation, Ernedis continues to focus especially on cup quality and processing excellence — making his coffees stand out in speciality circles.


The Process:

This Sidra lot starts with selective hand‑picking of the ripest cherries, which are floated and depulped upon arrival at the mill. The beans undergo a dry fermentation for 84 hours, allowing controlled development of sugars and acids before they are washed clean. After washing, the beans are laid to dry in a greenhouse for approximately 18–25 days depending on weather conditions. This extended drying period enhances sweetness while preserving clarity and complexity in the cup.

In the cup, Ernedis Rodriguez Sidra delivers a captivating fruit‑forward profile. Expect juicy plum 🍑 and white nectarine 🍑 sweetness up front, complemented by lush lychee 🍇 notes and delicate violet 🌸 florals on the aroma. What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
