The most fermentation-driven coffee in the Datura lineup, Symmetry is the result of years of innovation and precise experimentation by producer Jamison Savage. It’s an ultra-expressive Gesha, pushing fermentation to its limits while maintaining stunning clarity and control. Expect dense aromatics, a syrupy, rounded body, and explosive layers of ripe fruit—sweet, complex, and persistently vibrant.
Process:
Only perfectly ripe Gesha cherries (21–24° BRIX) make the cut. After a second round of hand selection, cherries are sealed into temperature- and pH-monitored stainless tanks for over 50 hours. CO₂ is periodically infused to purge oxygen, maintaining a clean anaerobic environment throughout the fermentation cycle. Consistency is key—any drift in variables and the profile begins to break.
Post-fermentation, cherries are laid onto a custom three-tiered raised bed system developed by Jamison. Shaded drying dominates, extending the cycle to around 25 days. This slow, controlled approach enhances fruit absorption and preserves even humidity across the lot. Airflow and temperature are tightly regulated, and the coffee is manually agitated daily for uniform drying.
Once moisture reaches ~11%, the coffee is bagged in GrainPro and rested for up to 60 days in a cool, climate-stable bodega—allowing the profile to settle and integrate before release. The result is a bold, precise expression of fermented Gesha unlike anything else on our menu.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
