Tres Rayas – Natural, Tolima, Colombia

A full-bodied Colombian natural from Tres Rayas in Tolima, bursting with flavours of juniper berry, black cherry, and blackberry jam, wrapped in a boozy, liqueur-like character for an indulgent, spirited cup.

Founded in 2015 in Planadas, Tolima, Tres Rayas Coffee began with 25 producers and has grown into a respected regional association of 230 coffee growers from Gaitania, Santiago Pérez, and Planadas. Farms sit between 1,600 and 2,100 MASL, cultivating Caturra, Typica, Castillo, Colombia, and Bourbon.

With processing capacity for 80,000 kg of dry coffee during the main harvest (April–July) and 30,000 kg in the smaller harvest (September–November), Tres Rayas offers both washed and natural lots. The group champions sustainability by converting organic processing waste into compost and fostering the next generation of producers—welcoming 20 young farmers into their membership alongside 48 women and 20 indigenous producers.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
